Descended from 12 generations of master metal workers and in the process of passing this knowledge to his own children, Jose Ojeda creates cutlery that rivals or surpasses the very best in the world. Whether for the gourmet chef or the avid knife aficionado, his creations will never disappoint you. In fact many of his knives are considered fine art, as none can ever be truly duplicated, although they are reproducible with variations. He currently services a large, domestic clientele as well as a growing international interest, but the straightforward credo of the Ojeda family has been and will remain "Quality Over Quantity".
Every steak and utility knife is shaped by hand from the finest chromium and carbon steel. Unfortunately, the Ojeda family’s method of processing the steel is a closely guarded secret. What we do know is that the knives are extremely durable, will hold an edge, never rust, and will last a lifetime. They are beautifully balanced with the shank of the blade extending almost to the end of the handle, providing excellent balance and ease of handling.
The steel for the folding and hunting knives is heated for one hour at 3452 degrees Fahrenheit. Next, the artisans apply very precise blows to the soft metal to create a consistent blade thickness. Heating and shaping are repeated several times until the desired qualities have been achieved. The metal is then cooled and tested for hardness.
The handles of all Ojeda knives are also fabricated by hand. The handles of the steak and utility knives are made from a local wood called Coco Bolo, which is in the same family as Ironwood. The handles of the folding and hunting knives are made from sterling silver, antler, bone, ivory, and mother of pearl among other materials. Several of the collector’s knives also boast intricate engraving on the handles or the blades themselves. These detailed designs and engravings are just some of the distinguishing characteristics that contribute to making Ojeda cutlery a connoisseur’s delight, and having received the classification as a Master Artisan in his trade, a certificate of authenticity signed by Ojeda himself accompanies every major purchase.
